For this extraordinary specialty, our S*****vese grapes remained on the vine deep into winter. Only after prolonged sub-zero temperatures were the naturally frozen berries carefully harvested and gently pressed, yielding just a few precious drops of highly concentrated juice.


Following a slow fermentation that lasts several months, the result is an elegant luscious sweet wine with intense fruit character, delicate sweetness, and vibrant acidity that brings freshness, balance, and remarkable finesse.

Vinification
Selective harvest by hand in Dezember 2023, at -10°C. The frozen grapes were slowly pressed off over several hours (no colour is extracted during this process). Fermentation in stainless-steel tank for several months. Matured in tank on the fine-lees for several months. Bottled at high atmospheric pressure during the waxing moon in February 2025.
Wine description
A bright golden-yellow wine with a bouquet of wildflowers and delicate aromas of yellow fruits – apricot, peach, and hints of lychee. On the palate, it is fresh and lively, with notes of pineapple leading into tropical fruit flavors that reveal a subtle touch of honey on the finish. Beautifully structured and well-balanced.
