Pinot Noir G-Stück 2019
Winemaking like 1000 years ago. The grapes for the G-Stück are sourced from the historical vineyard sites Thal and Käferberg, where the vines grow on chalky sands and crystalline rocks. The "G" stands for "Ganz" which is German and translates to "whole". The healthy and ripe grape is picked by hand and brought to the cellar where it is vinified as a "whole piece", that is, berries and stems. The technique is ancient. After fermentation has started there is no mechanical interaction, the grapes are simply left to ferment gently and slowly. When the fermentation is complete we press the grapes, removing all the sugar from the still closed berries and then fermenting the juice dry in a second fermentation in small oak barrels. The result is a complex and fluid expression of the terroir we work with. Unique and purely handcrafted.

Vinification
Selectively harvested by hand during the end of September 2019. The whole grapes (with stems) ferment in small, open vats. While one part of them is crushed, the other part remains untouched (the berries ferment in their own skin; intercellular). Pressed off gently after 2 weeks. Final fermentation in a small used oak barrel. Spontaneous malolactic fermentation. Matured on the lees for two years. Minimal addition of sulphur. Bottled unfiltered at high atmospheric pressure during the waxing moon in spring 2020.
Wine description
Wide and individual aroma, red berries in the core, cranberries, some raspberry notes, also rose hip, then follow lower frequencies, deep and spice herbal note, roasted almonds and cornel cherries, slightly smoky. The palate is cool and fresh, with refined aromas of cranberries, cherries and mediterranean herbs, juicy and filigree with fantastic grip in the long finish.
