Cloudy Rosé
For this unusual Rosé, we macerated a small part of our Zweigelt and Sangiovese grapes in the press for a few hours and then pressed them off with high pressure. Due to the high pressure, a larger proportion of the skin tannins find their way into the falvourful juice, creating a pleasantly grippy mouthfeel. After fermentation in our used Sangiovese barrels, the wine was bottled unfiltered, with the full lees. This is an exciting wine in which we portray a very different face of Rosé.

The grapes have been selectivly harvested by hand in early October 2021. They were slightly crushed and macerated for some hours before we pressed them off with high pressure. Fermented in small oak barrel (used). Spontaneous malolactic fermentation. Matured on the lees for several months. Minimal addition of sulphur. Bottled unfiltered at high atmospheric pressure during the waxing moon in April 2022.
