No. 3: Cloudy Rosé.
For this unusual rosé, we macerated a small part of our Zweigelt and Sangiovese grapes in the press for a few hours and then pressed them off with high pressure. Due to the high pressure, a larger proportion of the skin tannins finds its way into the juice, creating a pleasantly grippy mouthfeel. After fermentation in a used Sangiovese barrel, the wine was bottled unfiltered, with the lees. An incredibly exciting experiment in which we portray a different dimension of the rosé-style.

The grapes have been selectivly harvested by hand in mid September 2020. Destemmed and crushed. Pressed off with high pressure. Fermentation in used Barrique, followed by 6 months of maturation in barrel. Minimal sulphur added. Bottled at high atmospheric pressure during the waxing moon in April 2021.
Wine description
Strawberry ice cream, blood orange, a little bit of yellow cherry, a smoky note of wood in the background, a hint of vanilla; the red berry fruit repeats on the palate, cranberries, strawberries, some wood, an almost creamy texture, juicy, elegant & grippy tannins, light-footed, very good aging potential.
