Unusual No.2 -
No. 3: Cloudy Rosé.
For this unusual Rosé, we macerated a small part of our Zweigelt and Sangiovese grapes in the press for a few hours and then pressed them off with high pressure. Due to the high pressure, a larger proportion of the skin tannins finds its way into the juice, creating a pleasantly grippy mouthfeel. After fermentation in a used Sangiovese barrel, the wine was bottled unfiltered, with the lees. An incredibly exciting experiment in which we portray a slightly different face of Rosé.
