Chardonnay Toasted & Unfiltered 2021
On the calcareous soils of the Kamptal, excellent Chardonnay grapes thrive. Our 45-year-old vines grow in the elevated vineyard of Kittmannsberg and on the expansive terraces in the Thal vineyard. Here, the small grapes can ripen slowly to achieve their full aromatic potential. After fermentation in large and small barrels, the wine ages for two years in small, lightly toasted oak barrels. It is bottled unfiltered after natural sedimentation to allow it to develop its optimal quality. This process results in a powerful Chardonnay with the unmistakable Hiedler signature.

The grapes were selectively hand-harvested in mid-October and later destemmed and lightly crushed. After several hours of maceration, they were gently pressed with low pressure. Fermented in large and small oak barrels. Subsequently, aged on the lees for several months in small, lightly toasted oak barrels. Bottled in August 2023, during high atmospheric pressure and the waxing moon phase. 100% artisanal.
Wine description
From the glass, a ripe citrus aroma wafts, with dominant light fruit notes, and a hint of mango in the mix, carried by the finest toasting, nuanced and clear. On the palate, it exerts a lot of pressure, with a juicy acidic structure, yellow fruit with red undertones, vineyard peach, complemented by roasted almonds and mocha beans, multi-layered and refined with a long, chalky-salty finish.
